Tahitian Vanilla Beans (V. tahitensis) are all about the aroma. With a heady, floral aroma and sweet notes of cherry and anise, Tahitian vanilla pairs particularly well with spring berries, tropical fruits, and pear. The flavor compounds in Tahitian Vanilla are more susceptible to heat than Madagascar Bourbon Vanilla, so save Tahitian Vanilla for short bakes or no-bake recipes.
